In my opinion, the woman generosity and courage to give that precious stone to the man without hesitation meant to him a lot more than the money he can get from that. So the man changed he's mind. Instead of keeping the stone to himself, he gave it back to the woman and praised her for her courage to give him that precious stone and he wish he could have the same courage to do that too.
I had to read this twice to understand it. The woman was really smart. She showed her generosity first, but then made the man want to know about generosity as well. She's really kind and intelligent! The traveler was a little wise too. Even though he was initially greedy, he reflected on his actions, and decided that he actually wanted something called 'generosity'.

I guess so too. Receiving the food from a generous stranger who doesn't even know you is already enough. If it's me I would not dare to ask for the precious stone even if I knew that she would give it to me. It's too much that I could ask for.
